






2 teaspoons dried sage
3 teaspoons salt
1 teaspoon ground black pepper
1/4 teaspoon dried marjoram
1 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes
1 pound ground pork
1 pound ground duck
as many of you, i have birds in the freezer from last season that are less than fresh and i need to make room for new birds. i decided this year to get a meat grinder and make some duck/pork sausage. i used mostly ringers but had some snipe and quail in the freezer too. it is delicious and wife and kid approved.
